YORKSHIRE PUDDING () - British roast beef would not be complete without it.More like a souffle, and nothing like a pudding, it is made with a batter of eggs, milk and flour, baked in beef drippings until puffy, crisp and golden brown. It may be prepared in a shallow baking dish or in the same pan as the roast. Like a hot souffle, Yorkshire Puddings will deflate shortly after being removed from the oven. They take their name from Englands northern county of Yorkshire.
