CHATEAU DE MONTIFAUD 'FINE PETITE CHAMPAGNE' - HOUSE COGNAC

Chateau Montifaud has been in the hands of the Vallet family for generations and their 58 hectare vineyard is situated in both the 'Grande' and the 'Petit' Champagne 'La Petit Champagne d'Archaic' in the heart of the Cognac region. The calcerous and chalky soil of this area similar to that of the south 'La Grande Champagne' is essential for the production of quality cognac. Chateau Montifaud further enhances this geological advantage by following certain procedures during production.

The cognacs are aged for almost twice as long as the average. They do not, therefore, have caramel or concentrate of Boise added (which is often used elsewhere to accelerate the ageing process). This slow alcohol reduction avoids any unpleasant side effects to the flavour and fragrance. The base wines are stored on their lees for 2 or 3 months until distillation, giving the resulting cognac a strong bouquet and length of flavour.

Chateau Montifaud Cognac is delicate and subtle, beautifully mellow with a fine fruitiness, delicate bouquet and little tannin due to the policy of not over using oak during the maturation process. The VSOP is kept in new oak casks before moving into old oak for the remaining period (10 years). The Napolean is aged for at least 15 years and the XO for 30 years.
